Made a yummy green salad for today's Father's Day celebration utilizing fresh produce from this week's Door to Door Organics box. In a bowl I combined two peaches I had cut into thin chunks, 1/2 of a sliced cucumber (both from the order), some basil from my little herb garden, some crumbled goat cheese and about 1/4 cup of chopped Taj Mahal snack mix from my NatureBox delivery last week (a mix of almonds, sunflower seeds and dried mangoes coated in a savory smoky curry blend). I then tossed this blend over some delicious locally grown red leaf lettuce from Door to Door. Served it with a yogurt dressing - plain yogurt with a little chutney, mustard and squeeze of lemon, thinned out with a little seltzer water. Turned out to be a neat flavor combination!
